Vino Santo D.O.C.
Produced from spiced grapes Malvasia di Candia. The best bunches from the oldest vineyard are gathered and set gently on the mats till Christmas. After the pressing the must is put in oaken casks that preserve the deposit (mother) of previous years and dates back to 1823.
The casks are placed in the attic to favour the climatic influence. The bottled product after 9 years of maturing is counted among the oldes wines in Italy.
It is amber coloured, the fragrance is rich of noble oxidations. It's full of aromatic suggestions, cloth, velvet-like, wide, generous. A wine for meditation that often in Emilia accompanies almond cakes. Obviously the production is limited.
